Is it possible to change a 1989 Mazda 323 non turbo rear brakes from drum to disc?

Only by replacing the entire rear end / axle

Yes it is.

I'd search junk yards to find one w/discs and then buy the ENTIRE braking system and the rear axle. You will need the parking brake cable and parts, rear pipes and hoses, Master cylinder and proportioning valve will be different as well (Discs require more hydraulic pressure than servo-assist drum brakes for the same braking force). The FRONT brakes on the 4-wheel disc car may be bigger than yours as well.

NOT a cheap swap.....

You could look up all the needed parts (new) at a dealer and I'll bet you'll spend $1500 or more to change it over.
